Food from Bihar. Made in Hyderabad.
Every Bihari who moves to Hyderabad for work runs into the same problem within about a month. The city feeds you well — but it does not feed you that. There is no litti worth the name. The vegetarian food is good and it is not this. Sattu is something you have to explain from scratch.
Litti roasted over coal, never baked in an oven. Brinjal charred whole on open flame until the skin lifts. Sattu ground fresh, mustard oil unrefined and pure vegetarian throughout. These are recipes that came down through families, and we cook them the long way because the short way tastes like the short way.
So this kitchen cooks about seventeen things, and cooks them the way they are cooked at home. Not a fusion. Not a modern take. Litti roasted on coal until the outside cracks, aloo dum left alone in a sealed handi until the gravy goes dark, sattu ground fresh because the packaged kind tastes of the packet.
It is one kitchen in Madhapur, run by a small team, delivering within about five kilometres. That is deliberate. We would rather be the best option in one part of Hyderabad than a mediocre one across all of it.
Coal, not an oven
Litti baked in an oven is bread with filling. Roasted over coal it picks up smoke, the outside cracks, and the sattu inside stays loose. It takes twenty-five minutes instead of eight. We take the twenty-five.
No water in the ghugni
White peas go in with mustard oil, ginger and their own soaking liquid, then cook down slowly until the gravy clings. Topping it up with water makes it faster and makes it soup.
Written down to the gram
Every dish has a recipe with exact quantities and timings. It is the least romantic thing about this kitchen and the reason your third order tastes like your first.
A short menu
Seventeen dishes. We would rather cook a few things properly than sixty things adequately. When something isn't good enough that day, it comes off the menu rather than going out.
