Ingredients: 500 g Whole wheat flour; 300 g Sattu (roasted gram flour); 80 g + more to finish Ghee; 2 tsp Ajwain (carom seeds); 1 tsp Kalonji (nigella); 8 cloves Garlic, chopped fine; 4 Green chilli, chopped; 4 tbsp Mustard oil; 2 tbsp Lemon juice; 2 tbsp Pickle masala; 2 Brinjal, large; 4 Tomato; 3 Potato, boiled 1. Rub 60 g of ghee into the flour until it holds shape when you squeeze it, then add water slowly and knead a stiff dough. Rest it, covered, for 30 minutes. 2. For the filling: mix sattu with mustard oil, garlic, green chilli, ajwain, kalonji, lemon and pickle masala. Add water one spoon at a time — you want it just damp enough to hold, never wet. Wet filling is the single most common way litti goes wrong; it steams from the inside and the crust never sets. 3. Divide the dough into twelve. Flatten each, spoon in the filling, close it fully and roll it smooth without cracks. 4. Roast over coal, turning every few minutes, until dark patches appear on all sides and the litti sounds hollow — about 20 minutes. In an oven at 200°C it will take 25 and it will not taste the same; you are baking bread, not roasting litti. 5. For chokha: char the brinjal and tomatoes directly on the flame until the skin blisters and lifts. Peel, then mash with boiled potato, mustard oil, garlic, green chilli, salt and coriander. Do not blend it — chokha is meant to be uneven. 6. This is the Sattu Sharbat on our menu, made at home. Ingredients: 3 tbsp Sattu; 300 ml Cold water; 1 tbsp Lemon juice; 1/2 tsp Black salt; 1/4 tsp Roasted cumin powder; 1/2 Green chilli, minced (optional); a few Mint leaves 1. Put the sattu in a glass and add two spoons of water first. Make a smooth paste before adding the rest — pour all the water in at once and you will be chasing lumps for the next five minutes. 2. Add the remaining water, lemon, black salt and roasted cumin. Whisk hard. 3. Taste and adjust the salt. It should be savoury and slightly sour, not sweet. 4. Add mint and the chilli if you want it sharp. Ingredients: 500 g Whole wheat flour; 250 g Jaggery; 100 g Ghee; 150 ml Water; 1 tbsp Fennel seeds; 3 tbsp Desiccated coconut; 1/2 tsp Cardamom powder; to deep fry Ghee or oil for frying 1. Dissolve the jaggery in warm water and strain it — jaggery almost always carries grit. 2. Rub the ghee into the flour thoroughly, then add fennel, coconut and cardamom. 3. Add the jaggery water little by little and bring it together into a very stiff dough. Stiffer than chapati dough, stiffer than feels right. A soft dough absorbs oil and gives you a limp thekua. 4. Press portions into the wooden mould, or fork a pattern onto them. The pattern is not decoration — the ridges are what make it crisp. 5. Fry on low heat. Low. High heat browns the outside while the inside stays raw, and thekua that is raw inside will not keep the three weeks it is supposed to. 6. Cool completely on a rack before storing. The name says it — til, kuta: sesame, beaten. If you stir it instead of beating it you have made something else. Ingredients: 300 g White sesame seeds; 200 g Jaggery; 2 tbsp Water; 1 tsp Ghee, for the board and your palms 1. Dry-roast the sesame on low heat, moving it constantly, until it turns a shade darker and starts popping. Take it off before it browns — sesame goes bitter fast, and there is no recovering it. 2. Melt the jaggery with two spoons of water and cook to the soft-ball stage: a drop in cold water should form a ball you can flatten between two fingers. Past that stage the whole batch sets hard as glass. 3. Tip the sesame in off the heat and fold it through fast. You have about ninety seconds of working time. 4. Now the part that makes it tilkut: turn it onto a greased board and beat it with a pestle or a heavy rolling pin, folding it back on itself between blows. Keep going until the mass turns pale, dry and layered rather than sticky. In Gaya this is done by two people taking turns, and that is not showmanship — it is how long it takes. 5. While it is still warm, press portions into flat discs. Done right they are dry to the touch and collapse into flakes when bitten, not chewy. 6. Cool completely before storing.
